I have a pumpkin pie in the oven and thought I would post one of my sweet potato recipes.
Kentucy Sweet Potatoes
6 med sweet potatoes
1/2 cup butter, melted
1/2 cup packed brown sugar
1/3 cup orange juice
1/2 cup Jack Daniels
1/2 cup pumpkin pie spice
1/2 cup chopped pecans
Cook unpeeled potatoes in water until done. Cool and peel. Mash with remaining ingredients except pecans. Sppon into lightly greased round baking dish. Sprinkle with nuts. Bake at 375 degrees for 45 minutes.
